About the Recipe
This recipe is best with larger fish that have a dense scale pattern ex. striped bass, large mouth bass, snapper and walleye.

Ingredients
1-2 fillets with skin and scales left on
1/2 stick unsalted butter
salt, pepper, garlic seasoning
1 fresh lime
optional: your favorite blackened seasoning
Preparation
Step 1
Preheat grill to 400 degrees. Lay each filet on a flat surface with the scale side down
Step 2
Melt 1/4 stick of butter in a small bowl. Then using a baster, coat the top of each filet liberally with melted butter.
Step 3
Season generously with salt, pepper and garlic mix on the top side of the filet. If preferred, also add your blackened seasoning.
Step 4
Lay the seasoned fish directly on grate, scale side down. Cook until flaky, typically 17-20 minutes for an average sized filet.
Step 5
Remove from grill. Sprinkle with fresh squeezed lime juice as desired and serve.
